LEMONY BARLEY WITH SHRIMP AND SPINACH

This recipe used to be a regular rotation in our kitchen then I totally forgot all about it. I was sure it was in the blog already, so I wanted to make it the other day and was shocked because… it has never been shared here. Shame. Shame. Shame. I will not walk through the streets of Manhattan in GoT fashion. Instead, I will quickly share it today, and hope to be forgiven.

LEMONY BARLEY WITH SHRIMP AND SPINACH
(inspired by a recipe from Fine Cooking)

1 lb. large shrimp, peeled and deveined (save peels for stock)
1/2 large onion, skin on
1 lemon, cut in slices
salt and pepper to taste
2 Tablespoons olive oil
1/2 onion, minced
1 stalk celery, minced
1 cup + 1/3 cup quick-cooking barley
2 Tablespoons lemon juice
3 cups fresh baby spinach leaves
1/4 cup black olives, pitted, cut in pieces
zest of 1 lemon

Make a shrimp stock simmering the shells with the half onion and lemon slices. Season it lightly with salt and pepper. Reserve.  You will use about 2 cups of the stock to cook the barley.

In a large skillet, heat the olive oil and saute the shrimp seasoned with a little salt until almost fully cooked. Remove and reserve, covered with foil. Add a little more oil if needed, and saute in the same pan the onion and celery  until fragrant, seasoning lightly with salt and pepper.

 Add the barley and stir until coated with the oil and veggie pieces. Add the lemon juice and cook, stirring, for 15 seconds. Pour in 2 cups of shrimp stock, 1/2 cup water and bring to a boil, scraping up any browned bits in the pan. Reduce the heat to medium low, cover, and simmer until the barley is tender, 12 minutes.

Uncover the pan, add in the spinach and cook until wilted. Stir in the reserved shrimp, black olives, and lemon zest.  Adjust seasoning if needed and serve right away.

Comments: This is truly delicious, and I am kicking myself for taking so long to bring this back to our table. It is quick to prepare, and if you like to make it even easier, use chicken stock, store-bought, which is actually part of the original recipe from Fine Cooking. I just feel that if you have the peels available, shrimp stock is ready so quickly, why not up the flavor of the dish with it?  Your kitchen, your decision.

SEA SCALLOPS WITH PEA PUREE & CILANTRO GREMOLATA

Preparing this dinner was not easy.  It was probably not very wise to make it during the kitchen hellnovation, but I was craving a nicer meal to make our Sunday evening feel special.  It can be very stressful to be in a house undergoing renovation, so having a slightly fancier meal seemed like a good idea.  However, what used to be a kitchen is now an almost empty space with no finished floors or appliances.  We are lucky to be able to keep the fridge turned on in our garage, and to have improvised two cooking areas: one in the laundry room, another in our enclosed patio.  Still, pantry items are in boxes, a few dishes are piled in the dining room for our daily use, a few pans at close reach, but not that many.  I wish you could see a video of me preparing this meal.  Actually, I am very glad there is no video documenting the process.  It involved me dashing a few times across rooms, forgetting that some passages are blocked by heavy plastic.  It involved a mildly twisted ankle while balancing scallops on a baking dish and “almost” losing them all to a floor covered in rough concrete bits. It also involved a scorched pan,  but the pea puree, even after subjected to torture tasted absolutely awesome!  So, allow me to share with you one of the toughest meals I prepared in the past year, a recipe that I first saw on a favorite food blog of mine, Taste Food.  Yes, I cooked from Lynda’s blog before…  😉

SEA SCALLOPS WITH GINGERED PEA PUREE AND CILANTRO GREMOLATA
(adapted from Taste Food)

for the scallops:
12 sea scallops
salt and pepper to taste
sprinkle of Mycryo

for the pea puree:
2 cups shelled English peas
salt
1 tablespoon freshly grated ginger
2 tablespoons extra-virgin olive oil
2 tablespoons freshly squeezed lemon juice
freshly ground black pepper
pinch of cayenne

for the gremolata:
1 cup cilantro leaves, chopped
1 garlic clove, minced
2 tablespoons finely grated lemon zest
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper

Make the gremolata by combining the cilantro, garlic, lemon zest, salt and pepper in a small bowl. Set aside.

Bring 4 cups water to a boil in a large saucepan. Add 2 teaspoons salt and the peas. Cook until peas are tender. Remove from heat and drain peas, reserving 1 cup cooking liquid.

Combine peas, ginger, olive oil, lemon juice, 1 teaspoon salt, 1 teaspoon black pepper and cayenne in bowl of food processor. Purée until smooth. Add some of the reserved water (approximately 1/4 cup) to thin to desired consistency; the purée should not be too thin. Discard remaining water. Transfer purée to a bowl and keep warm. Pat scallops dry and sprinkle all over with salt and pepper. Add a sprinkle of Mycryo right before cooking. Heat a non-stick skillet over medium-high heat. Add half of the scallops, taking care not to overcrowd the pan. Cook, turning once, until brown on both sides and just cooked through, about 4 minutes. Transfer to plate and keep warm. Repeat with remaining scallops.  No need to add any oil to the pan, just the sprinkle of Mycryo will be enough.

To assemble, spoon pea purée on serving plates. Top with scallops. Sprinkle scallops and purée with gremolata.  Serve immediately.

Comments:  Mycryo is a great product with a poorly chosen name, if you ask me.  The word –  Mycryo – makes me think of tears, sadness, despair.  But that could not be farther from the truth:  they gave sea scallops THE most perfect brown ever, even though they were prepared in THE most rudimentary cooking conditions available to a cook (the Drama Queen says hello). I even conducted a small experiment by preparing two batches of sea scallops.  One cost a small fortune, they were the ultra-special, huge dry sea scallops.  The other was a frozen type that while thawing released a gallon of white milky liquid.  No bueno.   With a light sprinkle of Mycryo (and no oil added to the non-stick pan), all scallops browned like a Brazilian under the tropical sun!   We could not tell the difference in texture or taste between the two types, which was quite amazing to me.   Great product! You can order here, they shipped very quickly, contrary to what I heard from customers who got it through amazon.com.

The pea puree competed heavily with the scallops to win the spotlight of this meal.   Bright flavor with the ginger and just a slight heat from the cayenne.  Lynda really came up with a perfectly balanced side dish.

I close this post with a little snapshot of our laundry room.  In one side we installed the induction cooktop + microwave. On the other side, where we do have a large sink, we stuffed together the coffee machine, coffee grinder, and our beloved Penguin Sodastream.  It’s cozy in there, folks. Cozy.

CELEBRATE WEDNESDAY WITH A SEAFOOD EXTRAVAGANZA

served2Phil came up with this recipe about a year ago, and it quickly became a favorite of ours.  The idea is to go to the store and get three kinds of seafood, whatever looks best. Add to that one vegetable: we usually alternate between broccoli, broccolini (love the stuff!) and asparagus.  Lately we’ve been adding fresh shiitake mushrooms too.  This is a very healthy yet substantial meal, in which the pasta is a minor component to give us just the carbs we need.

SEAFOOD EXTRAVAGANZA PASTA
(from the Bewitching Kitchen)

Pick three of the following options:
Sea scallops
Large shrimp
Salmon filets
Lobster tails
Ahi tuna filets

Choose one of these veggies:
Broccoli
Broccolini
Asparagus

Fresh shiitake mushrooms, caps only
Pasta (corkscrew, farfalle, fusilli)
A couple of lemons, juice and zest
1/4  cup + 2 Tbsp olive oil, divided
1 Tbsp vermouth
Thyme
salt and pepper

Add the 1/4 cup olive oil to a small bowl, squeeze the juice of 1 lemon, season with salt and pepper, and add the thyme.  Whisk well to form an emulsion. Use that to brush the seafood you intend to grill.

Slice the mushroom caps very thin, cut the broccoli in florets, if using asparagus or broccolini cut them in 1 inch pieces.   Saute’ the mushrooms in 1 Tbsp olive oil, when they are almost tender season with salt and pepper and add the vermouth and lemon zest.  Cover and cook for a couple of minutes. Keep warm.  Cook the veggies either in a little salted water or by steaming.  If using broccoli, shock them in cold water to keep the bright green color. Reserve.

Start grilling the seafood (salmon, lobster tail, or ahi tuna). Sautee the shrimp and scallops on 1 Tbsp olive oil, seasoning with salt and pepper.  Make sure not to over-cook the scallops and saute’ them in extra-high heat to sear the surface.   Cook the pasta to have it ready once all the rest of the food is done.  Reserve some of the pasta water in case you need it.

Once the pasta is done, drain it, put it back in the pan, add the mushrooms and broccoli, mix well.  If needed, add a little of the pasta water.  Transfer to a serving bowl, and add all the seafood on top, cutting the salmon (and lobster tails, if using) in large chunks.  Keep the scallops and shrimp whole. A squeeze of lemon juice all over the serving bowl is a nice final touch.

Comments:  I won’t sugar-coat the pill, this dish requires some effort so that all ingredients are ready at the same time for the final assembly. We always like to cook salmon and lobster tail on the grill, whereas the scallops and shrimp are sautéed on the stove.  Same for veggies and mushrooms.  You get the picture.  It is much easier if you and your partner (or friend, parent, sibling, room-mate, neighbor) cook this together.  However, usually Superman Phil is adamant about doing it all by himself. I am left watching him dash through the kitchen to the grill and back, spatula in hand, kitchen towel hanging from one shoulder, pasta water furiously boiling, and the dogs hoping that with all that activity some stuff might follow the Law of Gravity all the way to the kitchen floor.  Sometimes, it does happen… But, once all is said and done, we are rewarded with a great dinner! See my plate?  I go heavy on the scallops. I am not ashamed and will fight for the biggest, juiciest ones.   😉

This is a dish centered on seafood and supported by a nice helping of broccoli.  Squeeze some more lemon juice right before indulging… And, if that was not enough seafood for a meal, I’ll tell  you what we love to have as appetizer before this dinner. All of a sudden, Wednesday evening feels like a party!   😉

SLOW-BAKED SALMON

Let’s suppose that you find the flavor of salmon a bit strong, as I used to feel about anchovies and related items of a fishy persuasion. This recipe might just change your mind and begin a new gastronomic love affair.  With salmon, slow-baking until the meat is barely cooked gives the fish an almost mousse-like consistency, and flavor as mild as “salmon-ly” possible.   Plus, the lemon zest and thyme seasoning add a delicious counterpoint!   From the latest issue of Bon Appetit, this one goes into my favorites folder.

SLOW-BAKED SALMON WITH LEMON AND THYME
(adapted from Bon Appetit, May 2011)

1 + 1/2 Tbs olive oil, divided
4 salmon filets or 1 large piece, skin on
2 Tbs fresh thyme leaves, chopped
zest of 1 large lemon + juice
salt and pepper

Heat the oven to 275 F.  Line a baking dish with aluminum foil, coat it lightly with 1/2 Tbs of olive oil, and place the salmon filet over it, skin side down.

In a small bowl, mix the remaining tablespoon of olive oil with the thyme and lemon zest.  Rub this mixture all over the salmon, season with salt and pepper and squeeze a little lemon juice over it.   Let it rest for 10-15 minutes, then place it in the oven for 18-20 minutes, until the fish is just cooked.

Serve with lemon  wedges, and…

Comments:  We eat salmon on a weekly basis, but almost always grilled.  Phil, the expert,  makes it exactly the way I love, with the center still moist, never over-cooked.  The high heat of the grill, however, doesn’t mellow the salmon character at all, quite the contrary. We both love it, but it’s nice to have a change of pace.

This method can be adapted to all sorts of seasonings. In fact, when we move back home next month I’ll grab my Jacques Pepin‘s  “Fast Food My Way“, and re-visit one of my favorite recipes in that book, a salmon filet cooked at an even lower temperature, for about 40 minutes.   If I remember correctly, he coats the filet with breadcrumbs and ground hazelnuts.  It is outstanding, like so many of Pepin’s recipes.
