ROASTED VEGGIES WITH QUESO COTIJA DRESSING

I hope it’s not a faux-pas to blog about too many takes on roasted veggies. Is anyone keeping track, though?  But I cannot help it, not only the weather is perfect for turning the oven on, but roasted veggies go well with pretty much any main dish, from beef to seafood, and if you like to go vegetarian, they can be the star of the show.  I saw this recipe featured in a PBS cooking show that is new to me, Pati’s Mexican Table. Like Marcela Valladolid, Pati cooks Mexican food, but with a more down to earth demeanor. She has an adorable accent, and that friendly aura that captivates the viewer right away. Anyway, this is such a simple recipe, you can memorize it in a second (quiz to follow) : equal parts of orange juice, lime juice, and olive oil. Salt and pepper. You are done. Then, there’s the Cotija dressing, but no quiz on that one, because I am a kind teacher, and want you to get an A+.

ROASTED BROCCOLI AND CAULIFLOWER WITH QUESO COTIJA DRESSING
(adapted from Pati’s Mexican Table)

for the veggies:
1/4
 cup freshly squeezed lime juice
1/4 cup freshly squeezed orange juice
1/4 cup olive oil plus more for brushing
salt and pepper to taste
1/4 teaspoon freshly ground black pepper
1 medium head of broccoli cut into 1/4″ vertical slices
1 medium head of cauliflower cut into 1/4″ vertical slices

for the dressing:
1/2 cup crumbled queso Cotija
1/2 cup Mexican crema
1/4 cup vegetable oil
1 teaspoons sherry vinegar
2 tablespoons water
salt and pepper to taste

Heat oven to 475 degrees F. 

Mix the lime juice, orange juice, olive oil, salt and freshly ground black pepper in a small bowl. Whisk very well to combine.

Brush 2 large baking sheets with olive oil. Place the broccoli and cauliflower on each baking sheet, making sure that it is well spread out and not crowded. Evenly pour the orange juice mixture all over the vegetables.  Place in the oven and bake for 25 to 30 minutes, flipping once in between, until well roasted and considerably charred. Remove from the oven. 

While the veggies are roasting, combine in the jar of a blender the queso cotija, Mexican crema, vegetable oil, sherry vinegar, water, salt and pepper. Blend until smooth, adjust with water if desired. 

Serve the broccoli and cauliflower and ladle the queso cotija right on top, or pass the sauce at the table so that everyone can add as much as they want.

Comments: What made me want to try this recipe was the unusual way to slice the veggies. Vertically, including the stems. Essentially no waste, and they look so cute laying flat on the baking sheet. That also gives a nice amount of char all over, which means a ton of flavor. The citric component gets intensified by reduction, the veggies tender but still retaining some bite.  The Cotija dressing is super flavorful. The recipe makes more than needed for a light drizzle all over the veggies. Leftover keeps quite well in the fridge and next day you can drizzle over avocados, tomatoes, or even some grilled meat.

Speaking of grilled meat, we paired these saucy grilled veggies with grilled pork tenderloin, for a delicious, quick and easy dinner.

Note to self: adapt this recipe for the steam-roasting technique from Fine Cooking. Maybe using just the florets will work better in that case. Worth playing with, that’s for sure.

SPICY COTIJA & BLACK OLIVE SOURDOUGH

OCTOBER 16th IS WORLD BREAD DAY!

Sometimes I like a pure sourdough bread, one that allows just the flavor of the flour (a little rye is mandatory) to come through. Other times I get into a daring mode and try to come up with unusual or at least new to me combinations.  I’ve made a sourdough before with some Sriracha in the dough, and loved the outcome.  I decided to repeat it in this formula, but also included Mexican cheese (Cotija, a favorite of mine), and some special black olives that were on sale at our grocery store. To take the bread into a deeper Mexican path, I included some cornmeal in the formula too.  I love to see the olives peeking through the crust. Like Pavlov’s pup, I start to salivate…

SPICY COTIJA AND BLACK OLIVE SOURDOUGH
(from the Bewitching Kitchen, adapted from several sources)

for the levain:
15 g starter at 100% hydration
23 g water
23 g flour

for the soaker:
23g cornmeal (coarse)
75g boiling water
(mix and cool to room temperature before incorporating in the dough)

for the dough:
60 g levain
140 g water
1/4 teaspoon Sriracha sauce
all the soaker made as above
33 g spelt flour
208 g bread flour
6 g salt
80 g Cotija cheese in chunks
50 g black olives, pitted, diced fine.

Add starter to water and Sriracha, mix well. Add all flours, but leave salt behind. Incorporate the mixture into a shaggy mass, and allow it to sit at room temperature for about 30 minutes. Add salt and mix well, it should get a little smoother.

Bulk rise the dough for a total of 5 hours, with folds every 45 minutes (4 times). Shape, retard in the fridge overnight. Bake at 450 F with initial steam. I removed shaped loaf from the fridge one hour before baking time.  Cool completely on a rack before slicing.

Comments: I kept the cheese and the olives in reasonably large pieces. When you do that, the crumb structure won’t be particularly open, but I like the way the cheese gets very assertive in flavor once you bite into a piece. If you are a beginner at bread baking, cut into smaller pieces to make it easier to handle the dough. As you become more comfortable with the folding method, you can be more daring.  Particularly when adding nuts, it can be a bit of a challenge to fold the dough. But, once you shape and allow it to go for te final proof, all the goodies inside will find their perfect spot to be.

Phil made a full meal for himself the following evening resting a very tasty pan-fried red snapper on it, then crowning the whole thing with avocado slices. A sprinkle of black pepper and a squirt of lime juice on top, he was a very happy camper. I even got to try a bite…

FOCACCIA WITH CHILE AND COTIJA CHEESE

A while ago – June 2013, to be precise – I made a type of Italy-meets-Mexico-focaccia using a sauce with tomatillos. It turned out so tasty that I wanted to re-visit the same type of fusion cuisine again. It took me a while, but here is my second take on the subject.  I used my default recipe for the dough, topped with a mixture of olive oil, avocado oil, New Mexico chiles, and Cotija cheese. Some sun-dried tomatoes for a bit of concentrated sweetness, and voilà…

1 recipe of focaccia dough
Green New Mexico chiles, thinly sliced
Cotija cheese, crumbled (you can use feta, or even Mozzarella)
sun-dried tomatoes
olive oil
avocado oil
salt & pepper

Open the dough on a well-oiled baking dish, stretching with your hands, and making plenty of dimples all over its surface.

Add a good coating of olive and avocado oil, mixed about 50:50. Distribute the slices of chile, cheese, and sun-dried tomatoes all over the dough.  Season with salt and pepper.

Bake as directed in the original foccacia post.

Cut in slices and serve.

I am not offering a printable version, since the main recipe for the dough is from a previous post. The toppings don’t really need any type of precise measurement, so add as much or as little of each component you feel like. Black olives could be wonderful too, by the way…

For the chiles, I used the brand featured in this post, a gift from our friends V & K. They have amazing flavor, and of course go very well with Cotija cheese, one of those matches made in heaven.  Like V & K.

The focaccia squares freeze well, I like to wrap 3 to 4 squares in small packages and enjoy them for weeks. Simply remove from the freezer 30 minutes before your meal, and heat them in a low oven until warm and fragrant.
