ZUCCHINI NOODLES WITH SUNDRIED TOMATO PESTO

One of the best acquisitions for our kitchen was the spiralizer. It is the type of gadget that requires a little bit of getting used to. When I first got it, the idea of dragging it out of the cabinet, setting it on the countertop, and getting my technique right so that the strands would be uniformly gorgeous… seemed a bit much. But trust me, the more you use it, the better you’ll be and the more you’ll fall in love with it. Now I don’t even blink, grab it, and try it on all sorts of veggies, broccoli stalks being the most recent. Stay tuned for that one… Should I call them “broodles?” Yeah, broodles. Mind. Blown. But anyway, zucchini is probably the number one veggie that everyone uses. They have the perfect shape and give super long and beautiful strands. Plus, they marry well with so many sauces: Oriental style like soy with peanuts plus a little fish sauce to hip-it-up, tomato based sauces, cashew cream, real cream, pesto, browned butter… Today I am sharing a recipe from a favorite food blog of mine. I’ve cooked many dishes from  The Iron You. Mike raved about the combination of sun-dried tomato pesto and zoodles. He is one smart cookie. It is superb! You must try it.

ZUCCHINI NOODLES WITH SUN-DRIED TOMATO PESTO
(adapted from The Iron You)

for the sun-dried tomato pesto:
½ cup  oil-packed sun-dried tomatoes, drained
⅓ cup roasted almonds
4 tablespoons grated Parmesan cheese
4 tablespoons grated Pecorino Romano cheese
small bunch of fresh basil leaves
salt to taste
4 tablespoons olive oil

for the noodles:
6 medium-large zucchini

In a food processor (or blender) add roasted almonds and basil and pulse until roughly chopped. Add sun-dried tomatoes, Parmesan cheese, and Pecorino Romano cheese and process until a uniform paste has formed. Season with a little salt. With the food processor (or blender) running, stream in the olive oil and continue blending until the olive oil is emulsified into the pesto and the sauce looks uniform. Pesto can be stored in the refrigerator with a thin film of olive oil on top.

Using a spiralizer create zucchini noodles using your favorite blade, thin or thick, whatever you prefer.

Boil the zoodles in salted boiling water for 2 minutes, drain and mix with the pesto sauce while still very hot.  Sprinkle with additional Parmigiano cheese before serving.

Talk about a tasty pesto!  The texture of mine was not as smooth as the one Mike made, at least from the photos, but I don’t think that matters that much. If you prefer a smoother texture, process further and maybe add a little more olive oil.  I used roasted unsalted almonds, so I adjusted the seasoning with salt. Mike used salted almonds and he also used garlic, which I am sure most of my readers will enjoy too.  I fully agree that it was a match made in heaven with the zoodles.  We enjoyed it as a side dish with grilled pork tenderloin, but of course you could make it into a fully vegetarian meal if you add a few more goodies on the plate, like roasted asparagus, a big salad, or a crostini with a smear of goat cheese run under the broiler. Yeah, that sounds about right!

Today I have a very exciting post to share!  Do you know the blog Foodbod hosted by Elaine? Great site for vegetarian recipes with an upscale gourmet flair. I’ve been following her blog for a while, and I can tell you that pretty much everything she blogs about makes me dream about being a guest in her dining room. She lives far away from me, we have half a continent and a huge ocean separating us, but the fun thing of the food blog world is that we can have virtual events that join us. Recently Elaine started a series on her blog entitled “Pimp your veg.” Her goal is to come up with ways to make veggie dishes more interesting and fun, and she does that like nobody’s business! I was thrilled when she invited me to contribute with a post for this series using the spiralizer, which is one of my favorite gadgets these days.  So, if you’d like to see what I came up to pimp my veggies, stop by Foodbod, and…. SPIRALIZER FUN

In five years of blogging, I probably mentioned this before once or twice: I am not too wild about cooking fads, and usually avoid them.  For instance, that one from years ago, foams.  You could not go to a restaurant that considered itself slightly upscale without foams bubbling around your plate.  Then we have the more recent bacon-mania. Because 90% of humans adore bacon, all of a sudden bacon started popping up in every single culinary item.  Chocolate-covered bacon?  Yes, it is out there!  Bacon ice cream?  Why not? Well, if I have to explain it, I guess we are from different planets. And let’s not get me started on the fried egg topping everything lately. I guess this fad is still in its exponentially growing phase. Having said all that, I am heavily into the spiral cutter thing. And I insist, this is not a fad. It is a nice way to treat vegetables, easy to use, fast to prepare, and a ton of fun to eat.  Zucchini is by far my favorite target,  and I’ve shared one of the ways we enjoy it almost weekly, uncooked, bright and fresh. Strands of zucchini can get mushy very quickly when cooked, but now I think I hit the perfect method to deal with them.

LEMONY ZUCCHINI NOODLES & WHOLE-WHEAT SPAGHETTI
(from the Bewitching Kitchen)

Whole-wheat spaghetti (1/3 of your regular portion)
3 medium zucchini, ends removed, cut in a spiral cutter
1 Tbsp olive oil
1 shallot, minced
1/2 red bell pepper, diced (substitute tomatoes, spinach, anything you feel like)
lemon juice and zest
salt and pepper to taste

Cook the pasta in plenty of salted boiling water. As the pasta cooks, heat the olive oil, saute the shallot and red bell pepper until the shallots are translucent and with a little bit of color, and the red bell pepper starts to soften. Season lightly with salt, add the zest of the lemon on top of the warm mixture, cover the pan and let it rest while you finish dealing with the pasta.

Ten seconds before the end of cooking time, add the zucchini strands to the pot.  Time ten seconds and immediately drain it, reserving a little of the cooking water.  Return it to the hot, empty pot, add the sautéed shallots and red bell pepper, squeeze a little lemon juice,  toss it all gently, and adjust with pasta cooking water if necessary.   Taste for seasoning, adding ground black pepper if you like.

One of the things I love about this type of recipe is that you can vary the amount of pasta in it according to your mood or goals.  In the recipe I shared today, zucchini was prominent, pasta played a secondary role.  The resulting meal felt light and bright. A few weeks ago, I went the opposite way, and made the zucchini stay in the background. At that time I added wilted kale and sun-dried tomatoes to the dish. It was slightly heavier, and quite appropriate for the sorry evenings ahead, when the temperature will fall below 90 F, and I will go through a few boxes of Kleenex to deal with it.

If you are over the fence about getting a spiralizer, jump to the right side, the side where I am ready to play with you. You will not regret it, especially if you have kids who are over the fence about eating their veggies.  They might profess zoodles – like this tasty version from Mike’s blog –  their favorite dish ever!

CELEBRATE WEDNESDAY WITH A SPIRAL KICK

When I planned this dinner, I did not think it would turn out so delicious, and definitely not something that could go into my files of “Celebrate Wednesday“.  A simple grilled chicken served with a humble zucchini salad?   What could be so special about that?   Hard to pinpoint a particular reason, but I feel this meal was a gastronomic jackpot: the whole combination of flavors is perfect.  Refreshing, light, and satisfying.  You can change the salad around in lots of ways, as long as you add the dressing a few minutes before serving.  That will make sure the zucchini will get the right texture, losing some of its raw bite.  Fresh mint, shaved celery, shaved fennel, those are some of the ingredients that come to mind as add-ons. The chicken marinade will go with pretty much any protein. Including tofu, if you are so inclined…  😉

MisoChickenZucchini

GRILLED MISO CHICKEN
(adapted from Happy Food Happy Home blog)

4 boneless skinless chicken breasts
2 tablespoons Greek yogurt
2 teaspoons miso paste
2 teaspoons olive oil
2 teaspoons honey
juice of 1 lime (2-3 tablespoons)
1 tablespoon soy sauce
1/2 tsp black pepper
pinch of salt

Whisk together the marinade ingredients in a small bowl.

Place the chicken in a large ziplock bag and add the marinade. Toss everything around in the bag to coat all the chicken pieces. Marinade for at least 30 minutes and up to two hours.

Grill the chicken using the 7-6-5 method:  seven minutes on the first side, flip the pieces over, grill for 6 more minutes. Turn the grill off without opening the lid, and let the chicken stay inside for 5 minutes. Remove from the grill, let the meat rest for 5 to 10 minutes slightly tented with aluminum foil, slice and serve.

SPIRALIZED ZUCCHINI AND CUCUMBER SALAD
(from the Bewitching Kitchen, inspired by Skinny Kitchen)

2 zucchini, ends trimmed, cut on a spiral cutter
1/2 English cucumber, end trimmed, cut on a spiral cutter
juice and zest of 1 lemon
1 Tablespoon olive oil or to taste
1 avocado, cut in pieces
handful of grape or cherry tomatoes, sliced in half
fresh cilantro
salt and pepper to taste

Use a spiralizer or a mandolin fitted with a julienne blade and cut the zucchini into very thin, spaghetti-like strands. Do the same for the cucumber, but place it over paper towels to drain excess liquid. To make it easier to serve,  trim the strands cutting with scissors or a sharp knife, so that they are about 8 inches long. Place both veggies in a large serving bowl.  Reserve.

In a small bowl, make a quick emulsion whisking the olive oil and lemon juice, a touch of salt and pepper.  When it’s all emulsified, add the lemon zest.

Drizzle the dressing all over the strands of zucchini, and toss to coat.  Allow it to sit at room temperature for 5 to 10 minutes.  Add the avocado pieces, the tomatoes, toss gently to combine.  Sprinkle cilantro, adjust seasoning, and serve.

Comments:  First, my apologies for being unable to give immediate credit to the grilled chicken marinade.  I found it in the internet, thought I had bookmarked it, but instead I did a cut and paste of the ingredients and sent to myself by email.  (Palm hits the forehead!)  Since I clear my bookmark history every week, no luck tracking it down. (Head shake in disbelief…) Hopefully a lesson was learned. However, thanks to one of my dear readers, I could retrieve the source, and correct my mistake.  It came from Happy Food Happy Home. The salad.  Of course, the spiralizer makes it super fun and interesting, but taste should come first, and in this category we also have a winner. However, depending on how watery your cucumber might be, you could run into problems.  One way around it would be spiralizing only the zucchini and adding the cucumber in small pieces together with the avocado & tomatoes. You can salt them very lightly and wait for a few minutes until the salt draws most of the excessive liquid out.  A brief rinse, a brief encounter with paper towels, and voilà: perfect cucumber!   This is harder to do with the strands, so keep this in mind if you try this salad.

The husband verdict: you can make this recipe ANYTIME. It is awesome!  

When you witness a man who loves pasta, rice, and potatoes giving such a compliment to zucchini, you know you got something special going…  As special as offering two recipes in a single post (wink, wink). Almost as special as a Wednesday evening rescued from the boring middle of the week…
