ZAKARIAN’S PROSCIUTTO-WRAPPED CHICKEN BREAST

One of the only shows I watch on FoodTV these days is The Kitchen, with Marcela Valladolid, Sunny Anderson, Katie Lee, Jeff Mauro,  and the one and only Geoffrey Zakarian. The crowd has great chemistry together, each person bringing something different and fun to the show. Zakarian offers that touch of class and knowledge, sophisticated without ever being obnoxious, a tricky line to negotiate. Recently he shared a recipe with his characteristic signature: elegant, complex, but not overly fussy.  Chicken breasts filled with ricotta,  wrapped in prosciutto, crisped up on the stove top and finished in the oven. A quick pan sauce beautifully crowned the dish, bringing capers to the party. I have a weak spot for capers, in case you did not notice yet…  As I watched him prepare the recipe, I could not stop thinking that the whole thing would be perfect for sous-vide.  And sous-vide was the path I took. It was O.M.G. delicious. With the most enthusiastic happy dance to go with it.  Of course, if you don’t have the Anova gadget, don’t let that stop you.  I give you the exact method used by Zakarian in the show. However, I tell you, the texture of the meat cooked at that magical 141 F for hours… was superb. Superb!

PROSCIUTTO-WRAPPED CHICKEN BREAST

3 boneless, skinless chicken breasts
1 cup (about 60g)  sun-dried tomatoes, chopped (divided)
150g ricotta cheese
4 tablespoons chopped walnuts
1 tablespoon finely minced fresh sage
1 large egg yolk
salt and freshly cracked black pepper
9 slices prosciutto
1 tablespoon canola oil
2 tablespoons capers, rinsed
1 shallot, finely diced
1/4 cup (60 mL) Verjus (or white wine)
1/2  cup (120 mL) chicken stock
1 tablespoon butter

If using regular cooking, heat the oven to 375 degrees F.

Using a small knife, make an incision in the top rounded end of a chicken breast, cutting through the center and to the ends without breaking the sides, to form a pocket for the stuffing.

Combine 1/2 cup of the tomatoes, ricotta, walnuts, sage and egg yolk in a small bowl and season with salt and pepper. Using a spoon (or place the filling into a piping bag without a tip), stuff each chicken breast with 1/3 of the ricotta mixture. Season the chicken with salt and pepper, then lay the prosciutto into sheets of three pieces each, and roll around each stuffed breast. Heat the canola oil in a large, ovenproof saute pan until almost smoking. Sear the chicken breasts on the seam side of the prosciutto, then flip and sear the other side.Transfer the whole pan to the hot oven until the center of the chicken registers 160 degrees F, about 15 minutes.

If using sous-vide method: wrap each piece in plastic, then seal in a foodsaver type bag. Submerge in a water bath set to 141 F for 4 hours. When the time is up, remove the meat from the package, dry well and proceed to browning both sides on the stove top.

For both types of cooking, continue to make a pan sauce:  remove the chicken from the pan, add 1/2 cup of the sun-dried tomatoes, capers and shallots and cook over medium-high heat for 1 minute to soften the shallots. Add the Verjus to deglaze the pan, the chicken stock and cook until reduced by half, then swirl in the butter. Adjust seasoning with salt and pepper.

Slice the chicken and serve with the sauce.

Comments: I had a bit of a tough time filling the chicken. First I tried it as recommended, without a tip in the piping bag, but my bag was too thin, not sturdy enough to force the filling in. I tried with a tip, but the largest one I had was not wide enough and kept plugging with the pieces of walnuts. Since I was going to wrap the pieces with plastic anyway, I ended up cutting a slit around the side, opening the meat like a book, then rolling the prosciutto around. During the sous-vide cooking, it all turned into a perfectly shaped package. If you have a sturdy piping bag, it should work well.

What I love about sous-vide is how flexible you can be with timing. I served this meal for dinner on a super busy Sunday, in which we had no idea when we would be ready to finally sit down to eat. I set the water bath at 3pm and knew that whenever we wanted to have dinner, it would be a matter of 10 minutes to sear the pieces, and make the pan sauce. I had side dishes already made, just waiting to be re-heated. Easy but very impressive dinner.  Meat was perfectly cooked, the prosciutto gets all crusty and salty and tasty. And the sauce… capers are the perfect addition.  Zakarian really knows his way around food, Iron Chef that he is. And his beautiful gray hair only adds to his charm. Partial? Me? You’d think?   😉

About that Verjus: If you don’t have it, use white wine or simply chicken stock.  I am getting more and more fond of its subtle flavor, the way it brings mild acidity to a sauce or dressing.  And, by the way, did you know that a little Verjus mixed with carbonated water is a fantastic drink? Elaine tried it first and raved about it. Some people add sweetener, but we both like it straight. I am very fond of carbonated water with drops of bitters such as Angostura, so I’m not surprised that Verjus pleased me so much.

But, I digress. This is about the Zakarian’s recipe, and you definitely need to try it!  Perfect for a dinner party, you can assemble the chicken before, sear it quickly and bake it. Your guests will be impressed, thinking you slaved away for hours. But truth is, you did not…

RASPBERRY RICOTTA CAKE

This cake recipe was published in a recent issue of Bon Appetit magazine, and I wanted to make it right away.  I subscribe to several cooking magazines but they tend to accumulate by my bedside table, untouched. Then, a trip comes up and they go with me in the plane. I read and rip the pages that interest me, tossing the magazine before coming back home. I know that for some this might be a huge no-no, but ever since we moved from OK to KS and I donated my collection of Fine Cooking magazines, I stopped saving them. The cut out recipes are glued in a notebook, a system that works great for me.  Anyway, as I was reading that issue on a flight to Hawaii (yeah, you got that right…. we’ve been to paradise last month), this recipe screamed at me: MAKE ME! MAKE ME! MAKE ME! Glad I finally did, it’s a great cake, moist, tender, and not overly sweet, thanks to the natural tartness of raspberries.

RASPBERRY RICOTTA CAKE
(from Bon Appetit, March 2015)

Non-stick vegetable oil spray
1½ cups all-purpose flour
1 cup sugar
2 teaspoons baking powder
¾ teaspoon salt
3 large eggs, at room temperature
1½ cups ricotta
½ teaspoon vanilla extract
½ cup (1 stick) unsalted butter, melted
1 cup frozen raspberries, divided

Heat oven to 350°. Line a 9”-diameter cake pan with parchment paper and lightly coat with nonstick spray. Whisk flour, sugar, baking powder, and salt in a large bowl.

Whisk eggs, ricotta, and vanilla in a medium bowl until smooth; fold into dry ingredients just until blended. Then fold in butter, followed by ¾ cup raspberries, taking care not to crush berries. Scrape batter into prepared pan and scatter remaining ¼ cup raspberries all over the surface of the batter.

Bake cake until golden brown and a tester inserted into the center comes out clean, 50–60 minutes. Let cool at least 20 minutes before removing from the pan.

Comments: This cake was so easy to make that I got into hyperventilation from excessive confidence. Basically, there is no way out for me, cakes make me suffer, even when nothing goes wrong. I thought that the raspberries sitting on top of the batter looked awfully cute, but after a few minutes in the oven, I pushed some of them a little into the batter, just in case.  I bet it made no difference whatsoever, the cake experts might be shaking their heads at my naiveté.  Oh, well.

As you know, food blogging is a very social activity. We leave comments, we follow food bloggers we enjoy, sometimes for their cooking alone, sometimes for the “whole package”.  I love bloggers who are witty (hard to beat Maureen on that category) make me laugh, make me think, teach me something. I normally stay clear from sites that push endless surveys or advertisements. But, anyway, some bloggers seem to always cook stuff I want to make. One such example is Steve, from Oui, Chef.  He subscribes to the same magazines I do, so quite often I bookmark a recipe and, being the slow self I am, next thing I know, the recipe is on his site!  This is exactly what happened with this cake. This cake was absolutely delicious! I added a sprinkle of powdered sugar on top because I felt the raspberries would be happy. And everyone who tried this cake in our department seemed to be happy too.  Such a great simple treat to celebrate spring…  Make it, and tell me what you think.

BAKED RICOTTA, TAKE TWO

As far as appetizers go, it is hard to find a simpler recipe that would deliver as much flavor! You can find all sorts of variations in cookbooks and in the blogosphere, including my own blog a couple of years ago, using a recipe from my friend Celia.  Have hearty crackers or nice baguette toasts ready to dive in… my preference is to enjoy it still hot from the oven, but be very careful, the center of this baby will be like a cheesy lava.

Baked Ricotta

BAKED RICOTTA WITH GOAT CHEESE
(from the Bewitching Kitchen, inspired by many sources)

1 cup ricotta cheese, drained  (full fat)
1 large sprig of fresh rosemary leaves, chopped
1/2 teaspoon dried thyme
1 Tablespoon olive oil
grated zest of 1/2 lemon
1/4 cup room temperature goat cheese
pinch of crushed red pepper
pinch of kosher salt, more to taste

Preheat the oven to 375°F.

Heat the olive oil on a small pan, add the rosemary leaves. When the leaves start to sizzle, turn the heat off, and close the pan.  Let the oil infuse for 15 minutes.  Remove any large pieces of rosemary from the oil, very small bits can be added to the dip.

Combine the ricotta, rosemary oil,  and all other ingredients in a large bowl. Mix well, and transfer to an oven-proof dish. Bake for 20 to 25 minutes, until bubbly.    Serve right away with crackers or a nice baguette.  It is also good at room temperature.

While typing this recipe, I realized that I tend to add lemon zest and juice to almost everything I make…   Maybe I should have named the blog Lemony Kitchen. Truth is, just the thought of running out of lemons makes me very uncomfortable.  I will often taste a sauce, a salad dressing, a steamed veggie, and tell myself there’s something missing.   I reach for a lemon, and just a little bit of its juice does the trick.  In this particular recipe, the zest adds a lot, the baked cheese ends up with a lighter “feel”.

Of course, you should go ahead and change this recipe to suit your taste.  Tarragon or dill could be wonderful replacing rosemary.   If you are not fond of goat cheese, it can be left out, or substituted with feta or even another type of creamy cheese.  Maybe a Brie, if you don’t mind multiplying the calories and fat by a factor of 2. Maybe 3.  Who’s counting?   😉

A SIMPLE APPETIZER

When entertaining,  I pay equal attention to the appetizers and the main course because appetizers are the first  “welcome” to the guests. That first impression that leaves its mark.  It’s nice to have a few options that are simple to prepare, and this one fits the bill quite well.  Ever since I saw Celia’s post about it, I wanted to try it.  Baked ricotta!  You can adapt it to your own taste, adding different herbs and spices.  The most important step is draining the ricotta before baking, so that it doesn’t go all watery in the oven.

BAKED RICOTTA
(from Fig Jam and Lime Cordial)

1 container of full-fat ricotta cheese (8 – 10 oz)
salt and pepper
1/4 cup olive oil
zest of 1 lemon
dried herbs of  your choice

Drain the ricotta for a few hours in the fridge in a colander lined with  cheesecloth. Meanwhile, infuse the olive oil with lemon zest, by heating it gently in a small pan over very low heat. When the oil starts to form small bubbles on the edges, turn the heat off and close the pan.  After 30 minutes pass the oil through a sieve to remove the zest.

Transfer the drained ricotta to a small bowl, season it lightly with salt and pepper.  Spread it on an oven-proof dish, drizzle a little of the infused oil on top (you won’t need the full amount!), sprinkle with dried herbs and bake in a 350 F for 30 minutes, until set. Serve warm or cold with your favorite cracker or toast.

If I had to pick one item that we always serve when entertaining it would be hummus.  We love it and never get tired of it.  I suspect that baked ricotta will be present next to it from now on.  A very nice combination, they look good together and their flavors don’t clash, quite the contrary.

DREAMING of BUTTERNUT SQUASH

Could it be the one we harvested from our garden?   Was it one from the farmer’s market, so perfectly shaped, with a shiny skin that gave me pause before putting a knife into it?   No.   The butternut squash of my dreams – and I hope you can stand the truth – was sold in plastic bags,  uniformly cut, in a grocery store.  Confession heals the soul, so now I feel good! 😉  I must explain,  that since 1995 I’ve lived  in a  place devoid of  food  stores such  as “Trader Joe’s” and “Whole Foods.” Although our “Native Roots Market” and “Forward Foods” are local delights, whenever our travels took us to a city blessed with TJs, we’d make a point to stop by and collect enough goodies to tide us over for a few months.  However,  fresh produce and planes don’t mix,  so I had to “walk on by” all the  tempting veggies and just look.   Look, look and dream  about how nice it would be to buy that cute bag of perfectly diced butternut squash, and enjoy its succulence without risking my fingertips.  Here in LA  we have 5 Trader Joe’s and 2 Whole Foods within driving distance, so when I spotted that little yellow bag I grabbed it  and drove smiling all the way home …. beside the butternut squash of my dreams!

PASTA WITH ROASTED BUTTERNUT SQUASH, ARUGULA AND RICOTTA
(from the Bewitching Kitchen, inspired by Donna Hay)

pasta of your choice
butternut squash, cut in chunks
drizzle of olive oil
a few sage leaves
1/2 cup ricotta cheese (full fat, please)
fresh arugula, preferably baby leaves
zest of 1/2 lemon
salt and pepper to taste

Turn your oven to 400F, open the bag of butternut squash, admire how nice each piece looks, and spread them all in a single layer on a baking sheet.  Drizzle olive oil, season with salt and pepper, scatter a few fresh sage leaves over it, mix it all to coat all pieces with some oil, and roast for 20 minutes, until soft and starting to get brown at the edges.

Meanwhile, boil salted water to cook the pasta.   In a large bowl, place the arugula and ricotta cheese, breaking it up with a fork.  Season with salt and pepper.  When the pasta is cooked, reserve some of the water, then place the pasta over the arugula/ricotta mixture, mixing it all very well. Add the butternut squash, lemon zest, and a little of the pasta water in case the mixture seems too dry.   Adjust the seasoning, and serve.

Comments:  Due to the constraints of our nano-kitchen, I search for all sorts of shortcuts when preparing dinner.  Pasta sauces that don’t need much cooking are now  my best friends.   I got the inspiration from a cookbook that recently arrived in the  mail:  Donna Hay’s Off the Shelf. She only used ricotta and arugula, but butternut squash and sage sounded like a nice way to round out the pasta.   As far as cheese goes, ricotta is light, so I recommend the full fat version.

A juicy grilled chicken breast was all we needed for a simple, satisfying dinner on a Tuesday evening after a busy day at work… Life is good!
