SALMON AND BABY BOK CHOY OVER SUSHI RICE

I am often inspired by Molly Yeh and her fun show Girl Meets Farm on FoodTV Network. This is dinner in a single pan, filling and nutritious. I made the salmon in two different ways, as the husband prefers a simpler seasoning for his fish. See the comments for what I would change next time.

SALMON AND BABY BOK CHOY OVER SUSHI RICE
(adapted from Molly Yeh’s recipe)

1 + 1/2 cups sushi rice
4 small heads of baby bok choy, halved
1 tablespoon grapeseed oil
1 tablespoon toasted sesame oil
2 tablespoons grated fresh ginger
1 limes, zested and halved
2 teaspoons kosher salt plus more for seasoning the salmon
2 + 3/4 cups water
2 tablespoons light miso paste
2 tablespoons Japanese mayonnaise
4 skinless center cut salmon fillets
Sriracha, for drizzling

Heat the oven to 425 degrees F.

Put the rice in a fine strainer and rinse until the water runs clear. Drain well and spread in a braiser. Lay the bok choy in an even layer over top. Drizzle with the neutral oil, sesame oil, ginger, lime zest, and salt. Drizzle the water into the braiser. Bring to a boil.

Cover tightly with a lid and bake for 15 minutes.

While the rice and bok choy bakes, stir together the miso and Japanese mayonnaise. Season the salmon lightly with salt and brush with the miso sauce.
After 15 minutes, carefully uncover the braiser and lay the salmon pieces over the rice and bok choy. Cover again and continue to bake until the rice is tender and the salmon is just cooked through, about 15 minutes more.

Uncover the braiser and broil on the top rack just until the top of the salmon is nicely glazed, about 1 minute. Squeeze the halved lime over top. Serve with a drizzle of Sriracha.

Comments: First things first, I really loved the Japanese mayo-based topping for the filets. It is salty, a tad sweet, super flavorful. But the husband was happier with the more austere version I made for him, just olive oil, lemon juice, salt and Herbes de Provence. Do what suits you best. The rice was perfectly cooked using the timing suggested by Molly. Now, comes the full disclosure: the bok-choy disappointed us. It turned mushy and not at all the type of veggie we enjoy as a side dish. It is a nice idea to have everything in a single pan, but next time I will keep just the rice and salmon, and cook whatever veggie separately. Sautéed, air-fried, roasted. Anything to give it better texture.

We enjoyed it with air-fried carrots, so in the end it was a super nice meal for a Saturday night…

HAWAIIAN BREAD ROLLS

I have always flirted with the idea of baking these from scratch. This type of bread is popular in Brazil, although they don’t go as Hawaiian, they are just called pão doce, which translates as “sweet bread”. The shape, size, and taste is very similar, but the Brazilian concoction originates from Portugal. I adapted a recipe from Molly Yeh, the key component in this dough is pineapple juice, so go get some right away!

HAWAIIAN SWEET ROLLS
(adapted from Molly Yeh’s Girl Meets Farm)

390 grams all-purpose flour (about 3 cups)
2 + 1/4 tsp instant yeast (1 package)
1 + 1/2 teaspoons kosher salt
1/4 teaspoon ground turmeric
160 grams pineapple juice, slightly warmed warmed (about 2/3 cup)
2 tablespoons light brown sugar
1 tablespoons honey
1 large egg plus 2 yolks (egg white saved for egg wash later)
1/2 teaspoon vanilla extract
4 tablespoons (56 grams) unsalted butter, at room temperature, plus more for the pan
Flaky salt, for sprinkling

Add the flour, yeast, kosher salt and turmeric to a mixer fitted with the dough hook and mix on low to combine. Add the pineapple juice, brown sugar, honey, whole egg and yolks and vanilla. Increase the speed to medium and mix to form a somewhat stiff, shaggy dough, about 3 minutes. With the mixer running, add the butter, 1 tablespoon at a time, allowing each to fully incorporate before adding more. Once all of the butter is added, mix on medium-high to make a smooth, glossy, somewhat-wet dough, 10 to 12 minutes. Oil a large bowl and add the dough, turning to coat. Cover and let rise until doubled in size, about 2 hours.

Punch the dough down and divide into 12 equal pieces. Butter a quarter sheet pan. Form each piece into a ball and roll on the counter encased in your palm to tighten up the ball. Lay the balls in a 3-by-4 grid in the buttered pan. Cover loosely and let rise until puffed but not quite doubled, about 1 hour.

Heat the oven to 350F. When the rolls have risen, beat the reserved egg whites with a splash of water and brush over the rolls. Sprinkle with flaky salt. Bake until puffed and a deep golden brown; start checking at 20 minutes. Cool in the pan on a cooling rack for 10 minutes, then remove to cool completely sitting on the rack.

Comments: These are not only adorable to look at but dangerously delicious. Soft, not too sweet (I cut the sugar a bit from her original recipe), and the salt on top should not be omitted. They go well with pretty much anything, savory or sweet. What is even more important in our case, is that they freeze well, and defrost quickly. So after enjoying a couple on the day I baked them, I placed them in a bag in the freezer and whenever convenient, in a few minutes we had a delicious Hawaiian roll ready for us…

MISO CARAMEL CRACKER COOKIES

If you like salty-sweet things, these are for you. If you are not into baking, or – dare I say – if you describe yourself as a total bake-o-phobe, these are for you. No baking involved. A little stirring, a little melting, a lot of fun. Beware: they are addictive!


MISO CARAMEL CRACKER COOKIES
(from Molly Yeh)

11 ounces store-bought caramels (Like these)
2 tablespoons heavy cream
1 + 1/2 tablespoons miso paste
About 2 1/2 sleeves butter crackers, such as Ritz (about 72 crackers)
8 ounces chopped dark chocolate or dark chocolate chips (see my comments)
Sprinkles, for topping


In a medium pot, combine the caramels and heavy cream. Heat over medium low, stirring, until the caramels are melted and the mixture is smooth, about 7 minutes. Stir in the miso and remove from the heat. Let cool for a few minutes, so the caramel can thicken slightly.

Arrange half of the crackers salty-side down on a baking sheet lined with parchment and drop about 1 teaspoon caramel per cracker. Top each with another cracker salty-side up. Refrigerate for 30 minutes.
In a double boiler or a microwave in 30-second increments, melt the chocolate, stirring until smooth. Let cool slightly.

Dip the crackers halfway into the chocolate and place back on the baking sheet. Add sprinkles. Let set in the refrigerator or at room temperature until the chocolate is firm, about 30 minutes.

Comments: These got super nice reviews from our departmental colleagues. You can change the caramel by omitting the miso, adding orange, or anything you might fancy. Maybe use white chocolate to coat and different types of sprinkles. But the combination of miso caramel with the dark chocolate and the crackers is hard to beat. To coat, I used a 50:50 mixture of bittersweet chocolate with compound chocolate, which gives a little more smoothness to the coating and also tends to dry harder than untempered chocolate would. Feel free to temper chocolate if you prefer, or use any coating you like. The soft caramel with a hint of salt from the miso goes very well with the cracker and the intense chocolate coating. Truly delicious!
