SECRET RECIPE CLUB: ORANGE AND ROSEMARY PORK TENDERLOIN

The time has come again, for the much awaited Reveal Day of The Secret Recipe Club!  I felt a shiver up and down my spine when I got my assignment, and it is easy to see why:  my assigned blog, A Taste of Home Cooking, has been around since 2006!  She is a veteran food blogger by definition!

I struggled to choose a recipe, because too many appealed to me, and to make my life even harder, she kept publishing new posts with more enticing stuff,  like a recent Roasted Brussels Sprouts with Mushrooms and Cream.  At some point, I had to quit going back, and settled on two  possibilities, the first you’ll see today, of course, but I will be making the other one soon, independent of the SRC.


ORANGE AND ROSEMARY PORK TENDERLOIN
(slightly modified from A Taste of Home Cooking)

2 pork tenderloins
4 oranges, juiced
4 tablespoons olive oil
2 tablespoons white wine vinegar
2 teaspoons agave nectar
2 cloves garlic, finely chopped
2 tablespoons fresh rosemary, chopped
1/2 teaspoon kosher salt
Freshly ground black pepper
1/4 cup heavy cream
chopped parsley leaves

Cut the tenderloins in 3 or 4 equal portions and place them in a plastic bag. Whisk together the marinade ingredients and pour them over the meat. Cover and refrigerate for at least 4 hours, preferably overnight, massaging the meat when you have a chance, or moving the pieces around).

Preheat the oven to 370 degrees. Remove the pork from the fridge and pour the marinade into a small saucepan.

Heat an oven-safe skillet over medium-high heat. Place the pork pieces into the skillet and sear on all sides, about 10 minutes total. Put the skillet in the oven and roast for 20 minutes, until cooked through  (the meat should be pale pink in the center; if using a meat thermometer, the recommended safe internal temperature is 160°F), flipping the meat a couple of times during the roasting.

While the meat is roasting, put the saucepan with the remaining marinade over medium-high heat and bring to a boil. Keep boiling, uncovered, stirring regularly, until the marinade has reduced halfway. Add in the cream, salt and parsley. Stir, and keep warm over low heat.

When the meat is ready, remove the skillet from the oven, and transfer the meat to a cutting board. If there are any juices in the skillet add them to the sauce and bring back to a boil. Cut the meat pieces into thick slices and serve with the sauce,sprinkling more fresh parsley on top.

Comments:  This recipe was originally from Clotilde, of Chocolate and Zucchini, another ultra-veteran blog, but I followed all the modifications from “A Taste of Home”,  like browning the meat before, and increasing baking time.  Departing from both versions, I opted for an amount of cream halfway  between them.   You can get by with less, maybe a couple of tablespoons, or splurge, but I felt the meat had just the right amount of naughtiness the way I made it… 😉

After making this recipe, I am convinced we should all use oranges more often in sauces, marinades, salad dressings.  They bring the citric component, but a lot more natural sweetness.

CLAY POT PORK ROAST

This recipe brings me nice memories!  It was featured in my favorite cooking show of all times, David Rosengarten‘s Taste, that aired on the FoodTV from 1994 to 2002.  Because of this particular episode I bought my first clay pot, a nice unglazed Romertopf, that unfortunately ended up shattered to pieces during a move.   This recipe, low in fat but full of flavor, was one of the first dinners I cooked for Phil when we were dating.  As I said, it brings me wonderful memories…  😉

ANCHO & CHIPOTLE RUBBED PORK LOIN

3 dried ancho chilies
2 chipotles canned in adobo sauce
1 teaspoon minced garlic
1 tablespoon olive oil
1 tablespoon ground cumin
pinch of ground cloves
2 teaspoons salt
1 teaspoon freshly ground black pepper
1 boneless loin of pork (about 1 1/2 to 2 pounds)
1 medium white onion, very thinly sliced

Toast the dried ancho chilies by putting them in a preheated 200°F oven for 3 minutes, do not let them burn. Remove the toasted chilies from the oven and open them up. Remove and discard the seeds and stems. Place the chilies in a bowl and cover with very hot tap water.

When chilies are soft (after about 15 minutes), remove them from the water and place them together with the chipotles in the work bowl of a food processor, along with the garlic, oil, cumin, cloves, salt, and pepper. Pulse to make a rough paste. Rub the paste all over the pork loin with your fingers. Cover the rubbed pork and refrigerate for 8 hours. Remove it from the refrigerator 1 hour before you want to start cooking.

Make a bed of half the sliced onion in the clay pot. Lay the marinated pork loin over it. Cover the pork with the remaining onion. Do not add any liquid.   If your clay pot is unglazed, you may have to soak it (or only its lid) in water before using.  Follow the instructions for your clay pot, but almost any brand needs to go in a cold oven, so place it in the oven and turn it to 300F.  Once it reaches the temperature,  cook, covered for one hour. Do not open the pot. After one hour, remove the roast from the oven. Let it sit in its broth, still covered, for 10 minutes. Slice the roast thinly and serve.

I cannot praise this recipe enough!  The color in the photo was not enhanced by Photoshop or any other trick.   The chilies give the onions an amazing red/orange tint, and the clay pot locks in moisture, so that the dish creates its own juices.   I left the onions whole around the side of the serving dish, because Phil prefers to avoid them, but you could remove them together with some of the cooking juices and process, making a spicy sauce to spoon over the meat. Thickening it with some type of starch would be optional. I like this preparation on the lighter side.    Whatever you choose to do, the key is to cut the pork in very thin slices.  They will be tender and juicy, almost as if you brined the meat before cooking.

I’ve made this exact recipe without marinating for several hours, and it was still delicious, but if you have 8 hours to spare, do as David suggests.  He knows what he’s talking about…

I now use a glazed clay pot, and actually prefer this kind because it cleans better.  Neat freak that I am, using cast iron pans and clay pots that should not be washed with soap and water is a bit of a problem.    So, a glazed pot suits me much better!  😉

PROTOCOL FOR A FIFTEEN-MINUTE DINNER

Materials
1 pork tenderloin
1/4 cup maple syrup
1 Tbs  soy sauce
2 tsp ground chili pepper
fettucini (I used whole wheat)
big bunch of baby spinach
lemon zest
red pepper flakes
1 Tbs olive oil
salt and pepper

Method
1. Put a large pot of salted water to boil and turn your grill on.

2. In a small bowl, make a little paste with maple syrup, soy sauce, and chili pepper.

3. In a large bowl where you’ll serve the pasta, mix the olive oil with red pepper flakes and lemon zest.

4. Cut the pork tenderloin in 1/4 inch slices, pound each very lightly with a mallet, and brush each side with the maple/chili glaze. Season with a little salt.

5. Place the pasta in the boiling water and start the timer.

6.  Grill each slice of pork tenderloin for a couple of minutes, turn, and grill for 2 minutes more on the second side.   Remove to a platter and keep warm.

7.  Two minutes before the pasta is done cooking, add the baby spinach, and finish them cooking together.

8.Reserve a little of the cooking water, drain the pasta/spinach, add them to  the serving bowl, mix well to combine, add some of the cooking water if necessary.   Adjust seasoning with salt and pepper.

9. Serve some pasta with the pork tenderloin.

Comments: The basic inspiration from this recipe came from Mark Bittman’s Quick and Easy Recipes from the New York Times.  Adding the spinach to the same pan the pasta is cooking works quite well, but you need to be careful about the timing – overcooking the spinach could ruin the dish.

The pork tenderloin is a recipe I jotted down by hand from some online source years ago, I wish I could give proper credit, but I was unable to find it now.  If you’ve never mixed maple syrup with pepper, keep this combo in mind, it’s a winner.  Another great example is a recipe by the Surreal Gourmet that marinates salmon steaks with maple syrup and coarsely ground pepper for a few days before grilling.   I need to make it soon in the Nano-Bewitching Kitchen because it’s an old favorite of mine.

CROWD PLEASING PULLED PORK

Suppose you´re facing the task of feeding a lot of people, but you´re short on time and low on cash. With this recipe you´ll have no worries, and everyone´ll love the moist, melt-in-your-mouth meat, with bits of tangy, crispy skin to please the palate!

PULLED PORK
(adapted from Gretchen´s and Mean Chef’s recipes)

1 whole pork butt, bone-in

for the dry rub
1/8 cup black pepper
1/4 cup paprika (I used smoked paprika)
1/4 cup turbinado sugar (or brown sugar)
2 tablespoons salt
2 teaspoons dry mustard
1 teaspoon cayenne pepper

Mix all the ingredients (except the meat)  in a bowl to prepare the dry rub (it´s a good idea to wear gloves).

Rub the pork all over with half of the dry rub, then place it in a plastic bag and refrigerate overnight. In the morning remove the pork from the bag and cover it with the rest of the spice mixture. If possible, let it sit at room temperature for a couple of hours, if not just place it in a 275F oven, uncovered on a rack in a roasting pan.

Roast until tender, almost falling apart. Depending on the size, it will take 7 – 9 hours. Longer will not hurt it; the desired internal temperature is 200F.

Pull the pork into pieces with forks, allowing some bits to fall on the floor to the delight of your dogs.

Serve the meat over sandwich buns with the sauce of your choice, or follow my “Brazilian variation”:  transfer the pulled meat to a clean baking dish.  Add 1 cup of water to the roasting pan and place it over the stove-top burner on medium heat to dissolve the bits of pork goodness that stuck to it during the long, slow roasting.  Strain it over a pyrex cup and allow the fat to rise to the top, then discard it.  Use the liquid to moisten the pulled meat, squeeze fresh lemon juice all over, cover with aluminum foil and place in a 350F oven for 20 minutes before serving over rice and beans.  (You can leave it in the oven for longer, it only gets better).
