A SPECIAL BIRTHDAY DINNER

The planning of my beloved’s Birthday dinner went all backwards. First I settled on the dessert, covered in my previous two posts. You know, the dessert that almost killed me. Then, I chose the side dish. Rice. Rice for a Birthday dinner? Yes. But let me explain. Ever since I met Phil he talks about this Persian rice his roommate used to prepare when they lived in their communal house. I call those times his hippie-days, I’ve seen pictures, and can tell you he was almost as handsome then as he is today. Back to rice. It is very traditional in Persian cuisine, countless ways to make it, probably each family has its own way, like feijoada for Brazilians. The ultimate goal is to produce a golden crust at the bottom of the pan, which when the rice is served, ends up on top. You break that crust and enjoy it with the perfectly cooked and perfumed rice underneath it.  I don’t know why it took me so long to finally make it at home, but better late than never. And with the side dish decided, I picked a main dish to match:  chicken thighs braised in Middle-Eastern spices, cooked with dried apricots and prunes. Green beans tied it all together…

So let’s start with the rice. The crust (tahdig)  in this case was a mixture of butter and grapeseed oil, which has a very mild taste, and helps prevent the butter from browning too much. That would make the rice bitter. Some recipes elaborate on this simple concept by making the crust with thin slices of pita bread, for instance. Or using yogurt, even potatoes. A nice culinary project to play with. I ended up using inspiration from several sources, but kept it simple, butter it was.

CHELOW (PERSIAN RICE)

1 + ¾ cups Basmati rice
2 Tablespoons salt for cooking rice
A pinch of saffron strands
A pinch of sugar
A pinch of salt
2 tbsp very hot water
2 tbsp butter, divided
2 tbsp grapeseed oil

Rinse the rice in several changes of cold water until the water runs clear, then leave to soak in a large bowl of water for 20 to 30 minutes. Drain and set aside. Bring a large pot of water to the boil and add 2 tablespoons of salt. Add the rice and cook for 5 minutes. The grains should still be pretty firm at this point. Drain, rinse briefly with cold water to prevent it from cooking any further. Reserve.

Make the saffron infusion by using a pestle and mortar to grind the saffron strands with a pinch of sugar and salt, then dissolve it with the very hot water.   Leave to steep for a few minutes. To make a plain tahdig for this amount of rice, you need an 8-inch nonstick saucepan with a snug-fitting lid. Melt 1 tablespoon of the butter with the grapeseed oil over medium heat on an 8-inch nonstick pan.  Add 1 tablespoon of the saffron liquid. When the oil is hot, sprinkle a thin layer of rice over the bottom and firmly press it down, covering the bottom of the pan. Carefully lay the rest of the rice on top, allowing it to form a domed shape at the center. Using the handle of a wooden spoon, make a few holes in the rice, almost reaching the bottom of the pan.

Place the remaining tablespoon of butter, cut in little pieces, in the holes you formed.  Sprinkle the rest of the saffron liquid on top of the rice, then put either a tea towel or four layers of paper towels on the surface, tucking the edges in. Cook the rice on medium heat for 5 minutes, then turn the heat down, as low as your stove will go, and cook for 15 minutes longer.  Take it off the heat and allow it to sit for a few minutes, while you fill your sink with a couple of inches of very cold water.

Place the saucepan in the water. That will loosen the crust at the bottom, and should allow you to un-mold it nicely.  Take the lid off, put a large plate on top, and without hesitation, flip the pan over to release the rice on the plate. If all goes well, you’ll be rewarded with a beautiful rice “cake”, a nice crust on top of perfectly cooked Basmati rice.

Comments: I wanted to follow the recipe quite closely, so I was compelled to get a mortar and pestle for it. I know, life can be tough. But the Force was with me, because Marshalls had a few for sale – cannot beat their prices –  in fact they had two kinds, and I brought one home with me. The method of choice to deal with saffron in Middle Eastern cuisine is to crush it with a little sugar and a little salt. Water then is added to solubilize it as best as possible, and that beautiful golden liquid is used in the recipe.

My heart was beating fast when I un-molded the pan, but it worked like a charm!  That crust is simply addictive. Even though Phil was the guest of honor for obvious reasons, I put up a mild fight for the real crusty bits, after all, I slaved away at the whole menu. Carioca Cake, remember? That should give me bids on 85% of the rice crust. But because I am of magnanimous nature, I settled for 60%.

Now let’s move to the main dish…

CHICKEN BRAISED WITH APRICOTS AND PRUNES
(adapted from The Saffron Tales, pressure cooker optional)

Grapeseed oil
2 shallots, finely chopped (or 1 large onion)
1/2 tsp ground cumin
1/2 tsp ground coriander
6 chicken thighs, boneless, skinless
1 + 1/2 teaspoon turmeric
1/2 teaspoon cinnamon
1/2 teaspoon black pepper, ground
1 + 1/2 cups chicken stock (approximately)
12 dried apricots
12 prunes
good pinch of saffron
pinch of sugar and salt
2 tablespoons very hot water
lemon juice to taste (a tablespoon or so)

Heat 3 tablespoons of oil in a saute pan and fry the shallots over very low heat until golden brown, take your time and allow the deep flavors to develop. Season the chicken pieces all over with salt, add to the saute pan with the caramelized shallots, then add the cumin, coriander, cinnamon,  turmeric and black pepper.   Cook until the chicken is golden on all sides, then transfer to a pressure cooker. Add one cup of stock, if it almost cover the meat it will be enough, if not add another half a cup. Close the pressure cooker and once it reaches full pressure, cook for 18 minutes.  In the meantime, add boiling water to the apricots and prunes in a small bowl, and let them sit to soften slightly. At the end of 18 minutes, release the pressure running the pan under the faucet with cold water.

Grind the saffron with a pinch of sugar and salt in the pestle and mortar and then transfer to a cup and leave to steep in very hot water for 2 minutes.

When the chicken is ready, add the softened fruit, along with the lemon juice and the saffron liquid. Simmer on low heat for 10 minutes with the lid off, until the sauce has thickened slightly. Adjust seasoning and serve over rice, or another side dish of your choice.

No pressure cooker? Use any heavy pan with a tight lid and cook the chicken for about 40 minutes, until very tender, then proceed with the addition of fruits and saffron liquid.

Comments: Most important step of this recipe, taking your time to caramelize those shallots (or onions, if you prefer). I used the pressure cooker because I love the texture it gives to the meat, and also it speeds the preparation so much. But, you can definitely use a regular pan. This is a recipe that gets better next day, so you can make it in advance. I actually made it in the morning and we enjoyed it at dinner, when all I had to do was warm it up, and take care of the Persian rice and the green beans.  It was a delightful meal…

FESTIVE NIGHT AT CENTRAL

The year is almost coming to an end. And you know what’s really scary about it? In less than 3 months I’ll be adding one more year to my life,  but still have not shared with you the wonderful celebration we had for  my Birthday back in March. In one word: unacceptable. So without further ado let me invite you for a flash-back from that great evening.

I don’t normally blog about dining out. First, I think there are countless sites and food blogs devoted to that already. Second, I am not too fond of taking photos of meals in restaurants. But, I make an exception for places that involve unique dining experiences (like Lasserre and Taillevent), or places we love so much we tend to go back at every opportunity. Exactly the case for Central in Washington, DC.  I’ll start by sharing with you the review Phil left on Open Table the following day:

We’ve now had the pleasure of Central restaurant 3 or 4 times. It is a Parisian bistrot on drugs! French food with a decidedly American (Hollywood) accent. After a LONG day in DC on business, just the thought of Central began to raise my mood. It was also my wife’s birthday. The restaurant is so festive and exciting, literally buzzing with excitement, from the servers to the chefs and the diners. The food is unique and delicious in classic French fashion: simple, yet exquisitely and richly prepared. Our appetizer was gougeres and prosciutto, a perfect combination and generous portions of both. Our plates were coq au vin and miso salmon with glazed turnips. At Central you find yourself saying things like ”….this is the best (your dish here) I’ve ever had”, and tonight was no exception.  At the end of the meal one had to say, WOW! Then, because of the birthday they brought the “Celebration Cake,” complete with a Roman candle. It’s kind of a chocolate encrusted clafoutis, topped with fresh strawberries, blueberries and whipped cream. After eating our meals it looked HUGE, but after a few bites we couldn’t stop ourselves, and we ate it all. My wife commented that it was one of her favorite meals in the past decade.”

 As Phil  mentioned, we had a kind of a tough day. Let’s say a scientific meeting was involved. And it wasn’t much fun. At all. So of course we were looking forward to exorcising the demons of the day and celebrating the occasion. One of the things I really look forward at Central is the bread basket they bring to you the moment you sit at the table. It is one of the best breads we’ve ever had. Rivals the best Parisian crusty baguettes you can sink your teeth into. Seriously. And, if you finish the basket, they will bring you more, so pace yourself and try to follow the mindful eating path. Yeah, right. Bread can be exquisitely addictive.

The restaurant has an open kitchen next to the dining room, so you can see all the action like the powerful salamander this guy is using… Crème brûlée, anyone? Onion soup gratinné, perhaps?

Michel Richard does a fantastic job, we’ve never had a bad meal in his place.  And I must say his manager Adriane was such a gracious hostess, absolutely perfect! Chatted with us without being too intrusive, making sure we were well taken care of.  Central feels special, slightly upscale, or as Phil likes to put it, “casual but chic.” If you find yourself in Washington DC, make a reservation, and have a blast!

Cheese Puffs… Don’t skip these!

Below you see a photo of our meals. The Coq au Vin was luscious, served over pappardelle. And my salmon was exactly what I was hoping it to be: perfectly cooked, just rare in the center, and paired with a reasonably light side dish, that did not steal the show.  Both entrées were spectacular.

One of the dishes that never leaves their menu is the famous Lobster Burger. I ordered it once for my dinner just out of curiosity, and it was quite decadent. But if you want decadent, nothing beats their “Celebration Cake“, which is pretty much three desserts in one: mousse, cake, a tumble of fruit encased in a crunchy shell of chocolate and topped with a sparkling candle. I still find it hard to believe we polished it off, but that’s exactly what happened.

KEN FORKISH’S WARM SPOT SOURDOUGH

First bread post of 2015!  Not the first bake of the year, because this was made for Phil’s birthday on the last week of December. He chose the whole menu, which consisted of oysters on the half-shell as a first course, and clam chowder as the main dish. Also according to his request, no dessert to keep things moderate.  Perfect for me.  The bread was all that bowl of chowdah needed to shine in its creamy glory!

I am not going to share the full recipe (from Ken Forkish’s book Flour Water Salt Yeast), but you can find it online with a visit to Karen’s site. And don’t just limit yourself to that recipe,  look around and be amazed by her talent. Just a recent example: she tackled Pretzel Rolls, the traditional Laugenbrötchen. That is on my mile-long list of things to try this year. Now, back to my sourdough…

A little walk through the method… The bread takes three days to prepare, but don’t let that intimidate you. It is worth your time. The interesting twist in the recipe is keeping your sourdough starter at a higher temperature of fermentation, around 85 F. During the winter that can be a challenge, but I am the lucky owner of a bread proofing box. Problem solved. Because the starter ferments at a higher temperature you will need to refresh it more often than usual, but as I mentioned in my previous sourdough post, Ken is particularly helpful in laying out a nice schedule for each of his recipes.

After the bulk fermentation, in which I gave four folding cycles to the dough, the bread is shaped, and retarded in the fridge overnight. From the fridge it goes straight into the hot oven, no need to bring it to room temperature.

One of the things I did differently in this bake was to flour my banetton, cover it with plastic wrap (Saran Wrap type), flour the plastic and place the shaped dough for its final proof, seam side UP (going against Ken’s usual method).  Next morning, I inverted the bread on parchment paper, slashed the surface and baked it with my normal method of steam (Dutch oven covered with a wet lid).  Ken likes to allow his breads to open naturally, so he proofs the shaped loaf with the seam side down, then simply inverts it on the baking sheet without slashing. I did this on my first time making this recipe a couple of months ago, and even though the bread tasted as good as this one, it failed to open in a more dramatic way.  Take a look:

Maybe it is just a matter of personal preference, but I rather help the bread open in a more defined way.  One more remark before I go: I liked the use of the plastic wrap because it gave me extra confidence removing the bread from the banetton. I’ve had too many situations of dough sticking and compromising the shape of the loaf in the end.  I suspect my skills to shape the loaf and generate enough surface tension need improvement. Until then, I will be using this trick, and if you had problems with dough sticking give it a try…
