Sometimes (quite often, I’m afraid) I have a recipe on my list of things to do ASAP and there it sits for a year or five. But every once in a while the exact opposite happens: I see a recipe, fall in love, and make it right away. This avocado hummus showed up on my screen during the last Secret Recipe Reveal Day, which fell exactly on Memorial Day. Maybe having the day off helped, but the truth is that I saw the recipe mid-morning, and made it at 3pm. How about that for efficiency?
AVOCADO HUMMUS
(slightly modified from Chocolate and Chillies)
1 19 oz can of chickpeas, drained and rinsed
2 avocados, pitted and diced
1 garlic clove, minced or pressed (I omitted)
handful of cilantro, roughly chopped
4 tbsp freshly squeezed lemon juice
2 tbsp extra-virgin olive oil
1/2 tsp ground cumin
1/4 cup water
salt and freshly ground pepper to taste
In a food processor add all the ingredients and process. Add more water if you would like it thinner.

We love hummus! It is one of the items we always have in the fridge, in fact. I know homemade is best, but we love it so much that we always have one or two of those little packages of Athenos plain hummus. I often add a little bit of freshly squeezed lemon juice, a touch of smoked paprika, and we enjoy it with crackers or veggie sticks. But this version with avocado instead of tahini is shockingly delicious… BTW, do you know that blog, Shockingly Delicious? Great site, check it out…
This hummus recipe makes quite a large amount, so I could save some for a later, happy day!

I’ve never heard of or seen hummus made with avocado but I’d definitely like to give it a try cause I can just imagine how rich and creamy it would be.

Superbly interesting mix I shall certainly try . . . [but, on the quiet side, am having a little bit of a trouble calling all of these mixes ‘hommus’: methinks that applied to something made of chickpeas and tahini +++ ?]

This avocado hummus looks as tasty as can be. I love avocados and this hummus makes a great and healthy dip for sport games and also for an afternoon snack. Love it and pinned!

we enjoyed it two days later, no problems…. the lemon juice kept the avocado mash from turning brown. Longer than that, I am not sure

Leave out the chickpeas and you have a different guacamole! That’s what I call a double duty recipe….

Hummus – tahini + avocado = avocado hummus
Avocado humms – chickpeas + salsa = guacamole

Try this dip! It’s from the Amanda Hesser’s New York Times Cookbook – just simply delicious. superb with fresh veggies.
Spicy, Garlicky Cashew Dip
1 cup roasted salted cashews
6 tablespoons cilantro w/ some stems
¼ cup canola or safflower oil
4 cloves garlic, roughly chopped
2 tablespoons soy sauce
2 teaspoons brown sugar
1 to 2 jalopeno peppers, rough chop w/ seeds or not, to taste
Juice of 1 lime
2 tablespoons water
Kosher salt and black pepper to taste

It took me forever to get here but I was eager to see this recipe, Sally. It certainly didn’t disappoint. Good to see that it will last for 2 days and can be frozen, too. Even if I halved the recipe, there would still be quite a bit for me to handle — and then I’d have a half-can of chickpeas to deal with. I can make this without fear of wasting most of it.

We love hummus too. And like you always have a container or two in the fridge. This version would be a HUGE hit in our house – particularly with Miss A. She is an avocado fiend. I can’t wait to make this. And I guarantee this one will be made within the week. 🙂 And I love that it make such a big amount. That will be a life saver for me.

What a delightful green hummus – it reminds me of a combination of creamy salsa verde with traditional chickpea hummus – yum! I’m the same way with recipes… there are so many that I intend to make (I have two binders full!) and others that spark an immediate flame. Funny that.
