SECRET RECIPE CLUB: LEMON POPPY-SEED MUFFINS

At the risk of repeating myself over and over and over, I must say the last Monday of each month makes me feel as happy as a kid in a toy store… Why? It is the day in which bloggers of my group at The Secret Recipe Club reveal which blog they were assigned to cook from, and post their recipes. This month, I could not be more pleased with my assignment. I got April’s blog, Angels Homestead. April is a very active participant of the club. You see, we have a Facebook group to discuss issues, make sure everyone is aware of what needs to be done (participation forms to be filled, upcoming Reveal Days), and April is always there with her very unique and personal touch. I was thrilled to cook from her blog! It took me just a few minutes to settle on a recipe, because right when I got the assignment I was wondering about something to bake and take to our department. Lemon poppy-seed muffins seemed perfect. And perfect they were! 😉

If you want to make a batch of muffins to cheer your co-workers early in the morning, here’s the way to do it:  before going to bed, measure the dry ingredients, place the flour in a large bowl, the baking powder and baking soda on small bowls next to it.  Get the two eggs ready to go, same for poppy seeds, sugar, and lemon.   Place paper liners in your muffin pan.  Measure the butter, the yogurt (or sour cream), and place both in the fridge. Marvel at your uncanny sense of organization, and go to sleep. Have pleasant dreams.

Next morning, turn the oven on.  Grab the yogurt from the fridge, zest and juice the lemon,  add the poppy seeds and mix them al together.

Beat the sugar with the butter and the eggs, add the poppy seeds mixture, incorporate all very well.  Add the dry ingredients and mix gently.  Add scoops of the batter to the muffin pan, trying to add the same amount to each paper liner.  If you are like me, at this stage of the day the caffeine has not kicked in yet, so your consistency won’t be stellar.  Oh, well…  Do your best.

Now, all you have to do is bake those babies, and get ready to brighten up the morning of your colleagues.  If you can make that a Monday morning, even better…   😉

  1. I used to LIVE for the lemon poppyseed muffins from Costco until I realized they were probably killing me slowly lol. This homemade version sounds totally perfect though!

    • Hummmm…. I’ve never had muffins from Costco – my only capital sin is the eventual Dunkin Donut straight from the conveyer’s belt – but in all the years of my life, I’ve only had three of those. Not bad… I suppose 😉

  2. Sally, I love your organized approach to making a warm baked treat to bring in to your co-workers. I am making note of it! I had fully intended to bring something in to kick off the week in proper fashion, but it just didn’t happen. 😦 Your muffins have such beautiful crowns–they are inviting you to take a bite!

  3. You’ve inspired me! I’m going to make these for work this week. I don’t usually go to the office on Fridays, but this week I am. I think this will be a perfect way to end the week. 🙂 Plus Mr. N will think I’m the best mom ever if I leave him some at home. These are his favorite kind of muffins!

  5. I’m making these tomorrow! YUM. My grandmother made the most amazing poppy seed cookies – anything poppy seed is nostalgic for me. And I learned last year that sour cream is a muffin’s best friend – it makes the muffins so moist and flavorful. I just so happen to have a bowl of lemons and a jar of poppy seeds in my kitchen – my book club friends will be very excited!

  6. Those look fabulous! Spookily I made blueberry and nectarine kefir muffins over the weekend, and split the dry mix so that we had half one day and half another. The kefir works just like the sour cream or the yoghurt. I think your organisational skillls are tip top! Lucky lucky work crew getting your baking and having you around to cheer them up with goodies like those babies!

    • I really enjoy reading your adventures with kefir – I can see that it would work as well or better than sour cream…

      As to my organizational skills, let’s say I am not always that efficient… but sometimes I hit it right, say 1 in 5 attempts?

  7. These muffins look great, Sally, and I applaud your organization skills. This is soo not me! Even if I did manage to get everything prepared the night before, there’s no guarantee that I’ll awake to finish the recipe. As Mom used to say, I “wake up hard.” Still, I do love poppy seed muffins and one in the morning is a great way to start a day. I can do this! 🙂

    • Well, I am quite the opposite, I wake up pretty much like the Energizer Bunny on a load of caffeine… 😉 Well, maybe not that energetic, but it’s my most productive time of the day.
