That&#8217;s when Lynda, from <a href="http://tastefoodblog.com/">Taste Food</a>, published her <a href="http://tastefoodblog.com/2011/09/21/ode-to-fall-pappardelle-with-pork-ragu/">&#8216;Ode to Fall&#8221;</a>, a pork ragu served over pappardelle.  I bookmarked the recipe right away, but only made it last week.  Better late than never, this ragu jumped straight into our list of favorites!  The pork falls apart after 2 hours simmering, and turns into a sauce that is intense and mild at the same time (if that&#8217;s at all possible! <img src='http://s1.wp.com/wp-includes/images/smilies/icon_wink.gif' alt=';-)' class='wp-smiley' />  )  Make it one day in advance for added deliciousness.</p>

<em>(adapted from <a href="http://tastefoodblog.com/2011/09/21/ode-to-fall-pappardelle-with-pork-ragu/">Taste Food</a>)</em></p>
<p>2 pounds pork butt, excess fat trimmed, cut in 2 inch chunks<br />
Salt<br />
Black pepper<br />
2 tablespoons olive oil<br />
1 medium yellow onion, chopped<br />
3 medium carrots, finely diced<br />
1 teaspoon red pepper flakes<br />
1 cup dry white wine<br />
2 (28 ounce) cans Italian plum tomatoes with juice<br />
2 bay leaves<br />
2 teaspoons dried oregano<br />
1 teaspoon dried thyme<br />
1/8 teaspoon ground cinnamon</p>
<p>1 pound noodles or pasta of your choice, cooked al dente<br />
Grated Parmiggiano cheese</p>
<p>Season the pieces of pork with salt and pepper.  Heat olive oil in a large pot until it’s shimmering. Add pork in one layer in batches, without overcrowding, so that it will brown without steaming.  After all sides are seared, remove pieces to a plate, and reserve until all the meat is browned.   Pour off all but 2 tablespoons of oil from the pan.</p>
<p>Add onion, carrots, and red pepper flakes. Sauté until the vegetables begin to soften, about 3 minutes. Carefully add the wine, and deglaze the pan with it. Add tomatoes, bay leaves, oregano, thyme, cinnamon, 1 teaspoon salt and pepper. Return pork to the pot and submerge in the sauce.  If necessary, add water to bring the level of the liquid to the top of the meat.  Simmer, covered, over low heat until pork is very tender, about 2 hours. Remove lid and continue to simmer, skimming fat occasionally with a spoon, until sauce is thickened, 45 minutes. Add salt and pepper to taste. Serve over pasta with grated Pecorino Romano cheese.</p>

<p><strong>Comments:</strong> You will need 2 pounds of cubed meat for this recipe, but there&#8217;s a lot of trimming to do on a piece of pork butt, so buy a large piece, and if you have more than you need, freeze the extra amount.</p>
<p>My main modification to this recipe was reducing the amount of onion and omitting the garlic. If you want, add a few cloves. Phil and garlic don&#8217;t match very well, so we use it very sparingly<em>.<br />
</em></p>
<p>Maybe if you are used to eating a lot of garlic, you&#8217;ll feel that there&#8217;s something missing in my version of this ragu, but I suggest you give it a try without, and concentrate on the pure taste of the meat as you savor your plate of pasta.  And, by the way, this ragu would be <em><strong>amazing</strong></em> served with any type of root veggie puree. Soft-cooked polenta wouldn&#8217;t be that bad either!</p>

			<content:encoded><![CDATA[<p>Last week, on a very busy day in which I had zero inspiration for cooking dinner, the daily email from Martha Stweart&#8217;s Everyday Food was a life saver.  It arrived mid-morning as usual,  and featured a grilled pork tenderloin with a simple soy-citrus marinade.  I had a tenderloin in the fridge, and all ingredients needed for the marinade.   Side dish?   Orzo sounded great, so I searched for recipes on the same website, and one of the top choices was &#8220;<em>Toasted Orzo with Olives and Lemon&#8221;</em>.   The clouds left the horizon,  blue skies announced that my dinner blues were gone.  And you&#8217;ll get <em>both</em> recipes in a single post!  <img src='http://s1.wp.com/wp-includes/images/smilies/icon_wink.gif' alt=';-)' class='wp-smiley' /> </p>

<strong>PORK TENDERLOIN WITH SOY, GINGER, AND LIME</strong><br />
<em>(adapted from <a href="http://www.marthastewart.com/317427/pork-tenderloin-with-soy-ginger-and-lime">Everyday Food</a>)</em></p>
<p>1/4 cup soy sauce<br />
1/4 cup rice vinegar<br />
1 tablespoon lime juice<br />
1 tablespoon vegetable oil (I used grapeseed)<br />
2 teaspoons grated fresh ginger<br />
1 pork tenderloin (about 1 pound), trimmed of excess fat and silver skin</p>
<p>In a medium bowl, combine soy sauce, vinegar, lime juice, oil, and ginger. Add pork to the marinade, turning to coat well on all sides. Marinate in the fridge for several hours to overnight.</p>
<p>Remove meat from marinade, and pat it dry.  Season it very lightly with salt, and grill for 7 minutes on a hot grill.  Turn the meat to grill the opposite side, and grill for 6 minutes more.  Without opening the grill, turn the heat off and let the meat stay inside for 5 minutes.   Remove the meat from the grill, tent it with foil, and let it rest for 5 minutes before slicing.</p>

<strong>TOASTED ORZO WITH OLIVES AND LEMON</strong><br />
<em>(adapted from <a href="http://www.marthastewart.com/315170/toasted-orzo-with-olives-and-lemon">Everyday Food</a>)</em></p>
<p>1 to 2 tablespoons olive oil<br />
1/2 pound orzo (1 + 1/4 cup)<br />
1 teaspoon grated lemon zest<br />
Salt and ground pepper<br />
1/4  cup slivered black olives<br />
1/4 cup chopped fresh parsley<br />
2 tablespoons fresh lemon juice</p>
<p>Heat 1 tablespoon of olive oil in a medium pan over medium-high heat. Add the orzo and cook for 5 minutes, stirring often.  Add 2 cups of water and lemon zest, season with salt and pepper, and bring to a boil. Reduce heat to medium; cover, and simmer until orzo is al dente and liquid is absorbed, 10 to 15 minutes.</p>
<p>Remove from heat. Stir in olives, parsley, lemon juice, and remaining tablespoons of olive oil, if desired (I omitted this step).</p>

<p><em><strong>Comments:</strong></em>  What a great dinner this was! Ready in less than 30 minutes, all I had to do was make the marinade at lunch time (but you can do it in the morning, if you don&#8217;t go home for lunch), and by the time we came home from work, dinner was a cinch to make.</p>
<p>I used the <a href="http://bewitchingkitchen.com/2010/06/05/7-6-5-grilled-pork-tenderloin/">7-6-5 grilling method</a> for the pork tenderloin, because it works well with pretty much any type of marinade or dry rub.  It is easy to take care of the rest of the meal when all you have to do is set a timer and move the meat around when it goes off.</p>
<p>Toasting the orzo is what makes this side dish so special.  I&#8217;ve used a similar method before in one of the simplest and greatest recipes I&#8217;ve made last year, the <a href="http://bewitchingkitchen.com/2011/07/08/radically-simple/">&#8220;Carrot Nib Orzo&#8221;</a>.  If until now you&#8217;ve only treated orzo as a normal pasta, boiling in salted water, please try either of these recipes, you will be more than pleasantly surprised by the improvement in taste and texture.</p>

			<content:encoded><![CDATA[<p>This recipe brings me nice memories!  It was featured in my favorite cooking show of all times, <a class="zem_slink" title="David Rosengarten" href="http://en.wikipedia.org/wiki/David_Rosengarten" rel="wikipedia">David Rosengarten</a>&#8216;s Taste, that aired on the FoodTV from 1994 to 2002.  Because of this particular episode I bought my first clay pot, a nice unglazed <a href="http://www.romertopfonline.com/?id=google&amp;gclid=CJX87ennjawCFQlYhwodSXe5og">Romertopf</a>, that unfortunately ended up shattered to pieces during a move.   This recipe, low in fat but full of flavor, was one of the first dinners I cooked for Phil when we were dating.  As I said, it brings me wonderful memories&#8230;  <img src='http://s1.wp.com/wp-includes/images/smilies/icon_wink.gif' alt=';-)' class='wp-smiley' /> </p>

<p><strong>ANCHO &amp; CHIPOTLE RUBBED PORK LOIN</strong><br />
<em>(from David Rosengarten)</em></p>
<p>3 dried ancho chilies<br />
2 chipotles canned in adobo sauce<br />
1 teaspoon minced garlic<br />
1 tablespoon olive oil<br />
1 tablespoon ground cumin<br />
pinch of ground cloves<br />
2 teaspoons salt<br />
1 teaspoon freshly ground black pepper<br />
1 boneless loin of pork (about 1 1/2 to 2 pounds)<br />
1 medium white onion, very thinly sliced</p>
<p>Toast the dried ancho chilies by putting them in a preheated 200°F oven for 3 minutes, do not let them burn. Remove the toasted chilies from the oven and open them up. Remove and discard the seeds and stems. Place the chilies in a bowl and cover with very hot tap water.</p>
<p>When chilies are soft (after about 15 minutes), remove them from the water and place them together with the chipotles in the work bowl of a food processor, along with the garlic, oil, cumin, cloves, salt, and pepper. Pulse to make a rough paste. Rub the paste all over the pork loin with your fingers. Cover the rubbed pork and refrigerate for 8 hours. Remove it from the refrigerator 1 hour before you want to start cooking.</p>
<p>Make a bed of half the sliced onion in the clay pot. Lay the marinated pork loin over it. Cover the pork with the remaining onion. Do not add any liquid.   If your clay pot is unglazed, you may have to soak it (or only its lid) in water before using.  Follow the instructions for your clay pot, but almost any brand needs to go in a cold oven, so place it in the oven and turn it to 300F.  Once it reaches the temperature,  cook, covered for one hour. Do not open the pot. After one hour, remove the roast from the oven. Let it sit in its broth, still covered, for 10 minutes. Slice the roast thinly and serve.</p>

<p>I cannot praise this recipe enough!  The color in the photo was not enhanced by Photoshop or any other trick.   The chilies give the onions an amazing red/orange tint, and the clay pot locks in moisture, so that the dish creates its own juices.   I left the onions whole around the side of the serving dish, because Phil prefers to avoid them, but you could remove them together with some of the cooking juices and process, making a spicy sauce to spoon over the meat. Thickening it with some type of starch would be optional. I like this preparation on the lighter side.    Whatever you choose to do, the key is to cut the pork in very thin slices.  They will be tender and juicy, almost as if you brined the meat before cooking.</p>
<p style="text-align:left;">I&#8217;ve made this exact recipe without marinating for several hours, and it was still delicious, but if you have 8 hours to spare, do as David suggests.  He knows what he&#8217;s talking about&#8230;</p>

<p>I now use a glazed clay pot, and actually prefer this kind because it cleans better.  Neat freak that I am, using cast iron pans and clay pots that should not be washed with soap and water is a bit of a problem.    So, a glazed pot suits me much better!  <img src='http://s1.wp.com/wp-includes/images/smilies/icon_wink.gif' alt=';-)' class='wp-smiley' /> </p>

			<content:encoded><![CDATA[<p>Your choice. As long as the meat stays juicy, moist and delicious, you can call it whatever you want. I like <em>kebabs </em>myself, and these were a big hit last week, probably our favorite dinner. Lightning-fast to prepare, especially if you do what I did, and assemble the skewers early in the day, saving them in the fridge until dinnertime. Just sprinkle a little lemon juice over the cut apples to prevent them from darkening too much, and cover with plastic wrap.</p>

<strong>BARBECUED PORK AND APPLE KEBABS</strong><br />

<p>1/2 cup apricot jam<br />
2 tablespoons cider vinegar<br />
1 tablespoon tomato paste<br />
2 tablespoons olive oil, plus more for grill<br />
salt and pepper<br />
2 small pork tenderloins -  halved lengthwise and cut into 16 cubes<br />
1 medium red onion, cut into 8 wedges<br />
1 Granny Smith apple, peeled and cut into 8 wedges</p>
<p>If using wooden skewers, soak them in water for several hours.  Assemble long skewers alternating pieces of pork, onion, and apple wedges.  Start with t a piece of meat, and end with a piece of apple.  Reserve.  (This step can be made several hours ahead of grilling).</p>
<p>In a small bowl, combine the apricot jam, vinegar, tomato paste,  and 1 Tsp olive oil. Season with salt and pepper.</p>
<p>Heat grill to medium-high, and oil the grates. Sprinkle the kebabs lightly with salt and black pepper.   Place skewers on grill; cover grill, and cook, turning occasionally, until grill marks are visible, about  8 minutes.  Brush the kebabs with some sauce, and cook, turning skewers and basting occasionally with more sauce, until pork is no longer pink in the center and is nicely glazed, 6  to 8 minutes more.</p>
<p>Serve over steamed rice, couscous, or just with a salad.</p>

<p>My only modification of the recipe was to skip the step of peeling the apples.  I hate peeling apples because I lose about 63% of the fruit in the process.  Anyway, not a good move.  I thought that the peel would help the apple keep its shape and would not interfere with the taste, but it just doesn&#8217;t work this way.  Do as Martha does, peel your apples!</p>
<p>These kebabs are absolutely great, we gave them two thumbs way up&#8230;   Since grilling takes less than 15 minutes, pick side dishes that cook quickly too.  I went with couscous &#8211; cannot beat that &#8211; and simply sauteed green beans.</p>
<p>Leftovers were still moist and tender next day, I warmed them briefly in the microwave and squeezed a little lemon juice when they were ready to be enjoyed.  The apricot glaze is a keeper, for pork, chicken, shrimp&#8230; endless possibilities.</p>
